Estanislao (“Lao”) Roman has been preparing Mexican cuisine since a child working in his father’s kitchen. Lao was a chef of a top Mexican restaurant in Atlanta in the late 80’s and 90’s, but moved to Greenwood in 1998 to open Santa Fe. For over 14 years, the Roman family has been serving Greenwood’s finest Mexican food with exciting dishes and unique ambiance.

Today, Lao and his family manage Santa Fe. Lao’s father and mother still work in the restaurant, along with his wife, Alicia, and only son, David, along with his wife, Sandra.

All foods are prepared fresh daily.  Lao arrives early to cut vegetables and start a new pot of broth.  He peels fresh avocados for their house-made guacamole and chops tomatoes for his special salsa.  You’ll only get the freshest ingredients and best tasting dishes at Santa Fe.
